Château de Varennes
Burgundy wedding cake

Bespoke wedding cakes for the orangery, chapel and gardens of Château de Varennes in South Burgundy. Made in Paris, delivered and installed in person by Ange Gimenez.

Château de Varennes
Burgundy, held in the light.

I am Ange Gimenez, a Paris-based wedding cake designer, and I work in sugar paste. Available for weddings and private celebrations at Château de Varennes, an 18th-century château in Saône-et-Loire, South Burgundy. For couples marrying there, I design a sculptural cake built for the orangery, the chapel lawn and a long summer evening.

Château de Varennes stands at Charette-Varennes, under an hour from Beaune and three and a half hours from Paris by road. The château dates from 1760 and the estate has belonged to the same family for four centuries. Seven hectares of parkland, a one-hectare pond, centuries-old trees and lavender borders surround it. CNN once listed it among the ten finest wedding venues in the world, and the couples who book it come largely from the United States and the United Kingdom, often for a full weekend of celebrations.

Most Varennes weddings move through three spaces. The chapel behind the house, which seats eighty. The gardens, for a cocktail hour under the trees. And the orangery, the great reception hall, where dinner and dancing carry up to two hundred guests late into the night. A wedding cake here has to read from the far end of a long, high room and still reward the guest who walks up close.

That is why I build in sugar paste, and why I build tall. Six to eight tiers when the room asks for it, with sugar flowers drawn from the Burgundy palette: garden roses, peony, wisteria, vine leaves and tendrils, the first blackcurrant blossom. Ivory, pale gold, a soft green. The architecture of the cake answers the architecture of the orangery rather than competing with it.

On the day, I drive from Paris to Varennes with the cake. I install it myself, adjust the presentation to the table and the evening light, and leave only when it is exactly right. The château team and your planner have one fewer thing to think about.

Why sugar paste
is the only choice

Buttercream photographs well. It does not survive a July evening in a Burgundy orangery with two hundred guests and the doors open onto the garden. Sugar paste does. Here is the difference, honestly stated.

01

Holds through a Burgundy summer evening

Varennes weddings run from the chapel in the afternoon to the orangery dance floor well past midnight. In July and August the room warms with the crowd and the candlelight. Sugar paste keeps its edges and its petals from the first photograph to the last. Buttercream softens, slides and loses its shape within hours.

02

Each petal sculpted individually

Every flower on my cakes is built petal by petal from sugar paste. Not piped, not printed, not pre-made. A single peony may take thirty minutes to an hour. A full cake may carry sixty, eighty, or a hundred and fifty individual flowers. The result is the kind of detail that holds up to a macro lens and to the memory of your guests years later.

03

Architectural height, six to eight tiers

Sugar paste gives me the structural integrity for tall, multi-tiered cakes. My signature work, including the eight-tier Fally with more than a hundred and fifty wafer paper flowers made entirely by hand, is only possible because of the medium. Buttercream at that height and scale would not survive transport, let alone a full evening.

04

Personally delivered and placed

I do not hand the cake off to a courier. I transport every commission myself to Varennes and set it in place in the orangery, adjusting the final presentation until it is exactly right. In a room of this scale, with the table, the lighting and the dance floor all in play, this direct involvement is not optional. It is the only way to guarantee the result.

Burgundy, venue by venue

From the orangery of Château de Varennes to the wine estates of the Côte de Beaune. Every Burgundy venue has its own scale, its own light, its own evening. I design for what each one asks.

How a wedding cake
comes to life

1

Discovery Call

I begin with a conversation. Your venue. Your aesthetic. The feeling you want the cake to carry. I listen before I speak. No questionnaire. A real exchange about your day.

2

Design Consultation

Based on your venue, season, and style references, I propose a design direction. Tier structure. Flower selection. Colour palette. The commission is confirmed at this stage, with timeline and logistics.

3

Sculpting Phase

Two to four weeks before your wedding, my hands are entirely yours. I sculpt every sugar flower by hand. Every petal is dried and assembled one at a time. The cake structure is built and dressed in the final days before delivery.

4

Delivery & Setup

I deliver to your venue myself. I transport the cake with the care it deserves and place it on the table by hand. I adjust the presentation on-site and leave only when it is exactly right. Your coordinator has one fewer thing to manage.

We ordered a wedding cake from Ange for our wedding. It was magnificent: beautiful, elegant, exactly what we had wished for. Ange brought so much detail to the cake, and it truly shows. You can see she is a passionate woman who delivers quality work. The taste was equally wonderful: red velvet with red berries and lemon raspberry. Delicious, not too sweet. Thank you, Ange Gimenez.

I take a limited number of commissions each year. Varennes books its summer weekends well ahead, often more than a year out, so write to me as soon as your date is confirmed. Six to twelve months before the wedding is comfortable. If your date is closer, reach out anyway. Depending on the season, shorter timelines can sometimes be accommodated.
Yes. I drive from Paris to Charette-Varennes with the cake, about three and a half hours, and install it myself in the orangery or wherever your reception is set. Timing is coordinated with your planner and the château team. This is not an additional service. A sugar paste sculpture of this complexity needs the hands that built it to be there at the end.
It is the only medium I work in. A Varennes reception runs late, and the orangery fills with two hundred guests, candles and a band. Buttercream softens in that warmth and loses its shape. Sugar paste holds its architecture and every petal through the evening. It is also what allows the tall, multi-tiered structures I build. Six or eight tiers in buttercream is a risk. In sugar paste it is not.
Every commission is bespoke and quoted on its own terms. The figure follows the number of tiers, the level of sugar sculpture, the guest count and the distance to your venue. I do not publish a price list. I share a detailed proposal after a first conversation, with no obligation to proceed. Travel and installation are quoted with the cake, so the figure you receive is final. How a commission unfolds, from first conversation to installation, is described on my services page.
That is where I start. Vine leaves and tendrils in sugar, garden roses and peonies from the park, wisteria, blackcurrant blossom. Ivory and pale gold against the limestone of the orangery, or a cooler palette if your flowers lead that way. The cake should look as though it could only exist at Varennes, on that evening, for the two of you.
Yes. Paris to Varennes is a morning's drive, and I deliver every commission myself across France and, on commission, abroad: Kenya among them. Travel and installation are quoted with the cake, so the figure you receive is final. If your wedding is at Château de Varennes and you have found your way to this page, please reach out.
